Italian Inspired Protein Omelet

I got up super early this morning so I decided to make myself an italian inspired protein omelet. 



  • 1/2 roma tomato
  • a little less than 1/4 cup chopped onion
  • 1 clove minced garlic
  • 4 egg whites
  • small handful of spinach
  • pepper
  • parmasan cheese
  • 1/4 c prepared TVP
  • pinch of fresh herbs

Directions: Toss the onion and garlic in a nonstick skillet and drizzle with a little EVOO.  Cook on medium for about 2 minutes then add the tomatoes for another minute or so.  You can season with pepper here if you want…I did.  When the tomatoes are soft, transfer to a plate.  Take the skillet off of the direct heat to let it cool off a bit, then spray again and add the egg whites with a little bit of pepper.  Let them cook until they are barely runny on the top, then add the spinach, the tomato/onion/garlic, and the TVP.  Close up the omelet and smush down with the spatula.  If it isn’t too flimsy you can attempt to flip it over, but mine was pretty full so I didn’t even try.  Sprinkle parmesan on top and add the fresh herbs!  I had parsley and thyme since that’s what is in the herb pot right now.  It was so delicious and definitely kept me full and gave me energy for my lunch hour power yoga with Leslie.  It was packed with protein…approximately 50g’s!  I also got a lot of vitamins A, C and fiber from the spinach and Vitamins A, C, E and K and fiber from the tomato.  It is SO satisfying and seriously does stick with you throughout the entire morning because of all of the protein and very small amount of carbs.  I think the entire meal was around 268 calories, 12g fiber, and probably less than 2g fat.  I’m happy with it.

Didn’t do any working out today, but did get our deposit back on our house woop woop!!  Now I’m going to be a Smithworks movie star and then on a date with John….my 4th of July weekend has officially begun!!!!!!!!
