Gullah Breakfast Sandwich

Our dinner last night at Bryan and Sarah’s was SO freakin good.  Gourmet chefs I tell ya. 

pork tenderloin, roasted asparagus and potatoes/onion/garlic, cucumber salad, fresh baked bread

I learned a new trick too…if you cook the garlic with the shell thing still on, it gives it this sweet amazing flavor.  She roasted the potatoes, onion and garlic for 25ish minutes on 400 degrees.  When she took them out she “shelled” the garlic and mixed it in with the potatoes and onions and it was fantastic.  I didn’t know garlic could be so sweet by itself.  We had a lot of fun and were really glad we got a chance to see our friend before he leaves for South Korea! 

This morning I woke up and did the kenpo p90x dvd…worked off those 2 brownies I ate after din din :).  Then made this AMAZING breakfast sandwich that I ate in the car on the way to work…

gullah egg whites with veggie cheese on all natural 100% whole wheat bread with raspberry spread

Directions:  Toast 2 slices of bread while the egg whites cook. Cooking egg whites for sandwich purposes is really easy.  Heat a pam sprayed nonstick pan (sounds stupid, but egg whites stick to non stick no matter what I try) on medium and dump in 3 egg whites, lightly season with fresh cracked pepper, a few red pepper flakes (optional) and Hot Luv Gullah Seasoning (use whatever seasoning you want to, I just love this stuff).  Don’t touch it with the spatula until it is cooked on the bottom and barely runny on the top, then move the egg a tiny bit so the runny stuff can get to the pan and cook through.  Add veggie cheese (you can obviously use regular cheese, but I love this stuff because it is soy based and dairy free – plus it’s a good source of calcium and protein without the added trans fats and saturated fats found in cheese), fold the egg in half and smush with the spatula.  Egg done.  Spread smuckers simply fruit raspberry jam on both pieces of bread for a little sweetness to go with the spice.  Put the egg on and voila! 

A breakfast packed with fiber and protein…plenty to fill me up until lunchtime, which I get to spend with my godmother Cara Lynn!!  I can’t wait to see her…she’s been in Italy and I haven’t gotten to talk to her since John and I got engaged.  Counting down until lunch…
