Egg and Tofu Breakfast Scramble

I woke up pretty excited this morning because 1. it’s technically my Friday since I’m taking the day off tomorrow and 2. I’m going to Charleston this weekend!  I’m stopping in Columbia tonight to see John and I think we’re going to a sushi restaurant…

Anyway, this morning I got up early and did 20 minutes on the elliptical before the p90x legs and back dvd.  After that, I decided to experiment with the rest of my tofu and made a protein packed egg and tofu scramble.

Directions: In a small bowl, mix together 2 egg whites with a few drops of cholula hot sauce, cracked pepper, and about 1/2 teaspoon of dried tarragon with a fork.  Spray a nonstick skillet and heat to medium low, add 1/4 block of crumbled tofu and cook until warm (30ish seconds), then add the eggs and cook until they set.  Add a little bit more hot sauce and spinach to the mix and cook for another minute or so, then top with a few shreds of gouda.  Nice recovery breakfast. 

I probably won’t get back on the blog today because I’ll get on the road right after work, but I’m going to try to schedule a couple of posts while I’m gone this weekend if I have time.  If not, I’ll get back to you Sunday!  Toots!
