TGIF! – Grown Up Southwest Grilled Cheese…yes please.

I got up early this morning to workout, but not early enough to cook breakfast.  I did 30 min on the elliptical followed by the p90x core synergistic workout – without using the DVD so I could watch GMA and speed up the process.  Tony tends to drag it out a little…

Anyway, the no breakfast thing really messed me up, especially after that workout.  I was STARVING by 10:00 so I decided to take my lunch break early and cook myself brunch.  Whoa am I happy I did because I invented a really good “Grown Up Southwest Grilled Cheese.” 

Grown Up Southwest Grilled Cheese with avocado, egg whites, veggie crumbles, feta and tomato on 100% whole wheat bread

First, I cooked 2 egg whites seasoned with pepper and a little bit of Cholula hot sauce in a non-stick skillet over medium low heat.  Once the egg whites were almost cooked, I added about 1/4 cup of Smart Ground Protein Veggie Crumbles and a little bit of olive oil and mixed it all together.  I then seasoned the egg and veggie crumble mixture with Grande Southwest Seasoning and topped with a few feta crumbles.  I turned the heat to simmer to let the cheese melt while I assembled the rest of the sandwich.

I put slices of 1/2 an avocado on 1 slice of all natural, 100% whole wheat bread and slices of 1/2 a tomato seasoned with fresh cracked pepper on the other.

Then I put the mixture onto the half with the avocado, closed the sandwhich, and put it back into the skillet to grill.

I sprayed the skillet with PAM, turned the heat up to medium low, and cooked for about 2 minutes on each side while smushing with a spatula.  That’s it!  It was SO flavorful and amazing.  I will be making this again for sure.  It was packed with protein, omega 3 fats, fiber and tons of other vitamins and nutrients.  I didn’t even have to use any condiments.  You could also use sausage crumbles I would think…I’ll try that out sometime.  I just wanted to finish those Smart Ground crumbles I bought on Monday since I won’t be home this weekend.

Heading to Charleston right after work for the night!  Saturday we are driving the rest of the way to Beaufort, SC for Elizabeth and Jay’s wedding.  Fun weekend ahead!!  Hope you have a good one too!  Toots.
